The weekend is upon us and that means more time for cooking!
If you are looking for a new recipe to try, then this toasted brown rice and mushrooms dish from Thaweni’s Cookery is perfect.
The spices and veggies give the rice some extra flavour.
It is delicious and is easy to make.

Ingredients:
Brown rice
Mushrooms
Onion
Garlic
Green, red and yellow peppers
Thyme
Parsley
Salt
Black pepper
paprika
Chicken stock
Method:
Dice your mushrooms
Fry them in a pot with butter ( 3-5minutes)
Add salt and pepper.
Remove the mushrooms from the pot.
Add butter to the pan and a little bit of oil.
Add garlic
Add onions
Add red, green and yellow pepper. Sauté for 5 minutes and add thyme.
Add brown rice ( 1 Cup)
Toast it for 4-5 minutes.
Add spices ( salt and pepper and paprika)
Add chicken stock
Let it cook for 30-40 minutes
Cut coriander and sprinkle it onto the rice.
Add parsley
Mix well.
Enjoy.
