Nothing like homemade seafood paella made with love and hearty spices, its perfect for a Sunday lunch meal.
Ingredients:
1 teaspoon of cooking oil
1 onion, finely chopped
2 teaspoon garlic, crushed
2 teaspoon ginger
400g half opened mussels in shell
200g hake, cubed
400g prawns
1 teaspoon medium curry powder
2 teaspoon tomato paste
1 cup long grain rice
1 can tomatoes, chopped
1 teaspoon sugar
4 cups chicken stock
1/2 cup white wine
1 cup frozen peas
Salt and pepper to taste
Method:
In a large saucepan, heat oil and sauté onion, garlic and ginger. Add the seafood mixture, hake and prawns, cook for 7 minutes.
Add medium curry powder and the long grain rice, cook until rice is coated. Add tomato paste and chopped tomatoes and cook for two minutes.
Pour chicken stock and ladle and add white wine, ladle until all liquid has been added and absorbed.
Add peas and season with salt and pepper to taste.
